Impress your kids with this super easy rice pudding recipe. They will think you’ve turned into a master chef.
Creamy Rice Pudding
- 1 cup of cooked rice
- 3/4 cup sugar
- 1/3 cup flour
- 2 cups of skimmed milk (any kind of milk will work)
- 1/4 teaspoon salt
- 3 egg yolks (slightly beaten)
- 1 teaspoon vanilla extract
- cinnamon, if desired
Heat sugar, flour, salt and skim milk in heavy saucepan over low heat until mixture begins to boil. Continue to boil while stirring constantly for 2-3 more minutes.
Remove milk mixture from heat. Stir 1/2 cup of the hot mix into the beaten egg yolks. Pour egg mix back into milk mix. Continue to cook on low heat for 2 more minutes, stirring constantly.
Remove thickened pudding from heat and stir in vanilla and cinnamon. Serve warm or cold. Also tasty with chai seasoning sprinkled on top.
Serves 6.
No more leftover rice!
